<正>虾青素(astaxanthin)是从海洋动物(包括虾、蟹等甲壳类以及鲑鳟鱼类)中发现的一种红色类胡萝卜素。纯虾青素单质为暗红棕色粉末,但在体内虾青素可与蛋白质结合而呈青、蓝色。虾青素是一种氧化型类胡萝卜素,是类胡萝卜素生物合成途径中的终产物,化学名为3,3′-二羟基-4,4′-二酮基-β,β-
